A degree in the culinary arts and the ability to cook well are not enough to launch a career in the competitive food industry.
Celebrity chef Bruce Lim said management skills like leadership, the right attitude and exposure to different gastronomic experiences would help an aspiring chef to succeed.
Lim, known for his show “The Boss” on the Asian Food Channel, was invited by Center for Culinary Arts (CCA) Manila’s new membership organization, Foodies Club, to demonstrate his Mexican taco recipe. He also shared his culinary experiences.
Foodies Club aims to elevate the students’ learning experiences through food tasting, trips and inspiration from great chefs. Students get to try different restaurants and participate in culinary tours. Restaurant owners/chefs share their experiences.
The Master Chef series is one of the club’s activities, conducted at least once a month.
Lim said perseverance and humility could help advance a person’s career. He said that when he was studying at Le Cordon Bleu France, it was challenging because of the rigorous curriculum.
Working under celebrity chef Gordon Ramsay tested his mettle and fortitude. He said working in the culinary industry was serious business and one should have discipline, high standards and people skills. Leadership skills were also imperative.
Lim advised students to decide early on what career path to take. He also stressed that self-confidence was necessary to deal with criticism.
